Gourmet Olive oil is healthier than other vegetable oils

It is considered the superior oil. It is made from the best olives and pressed without the use of excessive heat. This insures that most of the benefits are retained.

Virgin Oil is made from the second pressing of the olives with acidity level of less than 2% and a good taste.

Olive Oil is made from virgin oil and refined virgin oil with acidity level of less than 1% and has a mild flavor.

Extra Light undergoes a lot of refinement with a light color and very mild taste. It is mostly used to bake cakes and make desserts.

Pomace Oil is a blend of virgin oil and refined olive pomace. Pomace is the residue that is left after virgin oil is made. It is often used in restaurants for cooking.

Color Code

Green oil comes from olives harvested early in the season. Yellow oil comes from very ripe olives.

How to store it

It will oxidize after a few years and get a stale taste. You can prolong its life by storing it in a tight container in a dark and cool cupboard.

How to read the labels

Pure or 100% pure oil indicates that it is good enough for baking. Imported from Italy means that it was packed in Italy since most of the oil comes from Spain. Hand-picked is not an indication of superior olives. It is the processing that counts.
